Food Poisoning News
We will provide you with actual cases of food poisoning that have occurred.

In late June, a food poisoning outbreak occurred in Yashio City, Saitama Prefecture, in which 3453 people, including elementary and junior high school students and their teachers, complained of symptoms such as diarrhea and abdominal pain after eating school lunches, etc. Upon investigation, pathogenic E. coli [O7] was detected in the samples of the patients and in seaweed salad served at the school lunch.
According to the prefectural food safety division, the day before the school lunch was served, the seaweed mix and dried wakame, ingredients for the seaweed salad, were not heat-treated when they were rehydrated.
Other vegetables were used, but all were heat-treated, so by process of elimination, the seaweed that had been rehydrated was suspect.

The Ministry of Education, Culture, Sports, Science and Technology's "Hygienic Management Standards for School Meals" (p. 7) states, "In principle, all school lunch foods shall be prepared at the school lunch kitchen on the same day, without being cooked the day before, and shall be served heat-treated, excluding vegetables, fruits, etc. that are eaten raw." The school lunch menu is defined as "cooked foods, excluding vegetables, fruits, etc., to be eaten raw.
